Chocolate Helps the Medicine Go Down

Well, I don’t know about you, but I had a slightly crazy week.

I topped it off by knocking my wedding band down the garbage disposal. Not to worry—after the shock wore off, I was able to retrieve it! (And I learned to never ever leave my rings next to the sink again as I applied hand lotion.) Oh—and this was the day after I spilled tea all over my desk, thoroughly soaking some research materials, the corner of a book, and a smallish area of the carpet.

Whew!

This is what happens when I work a little too hard and don’t get enough sleep. I get clumsy.

In light of that, I thought it might be fun if we take a little detour today for a chocolate break. (Because, as we all know, chocolate does indeed help the medicine go down!)

Triple Chocolate Chunk Bourbon Brownie Pie

I basically have a brownie recipe I always use:

1 tablespoon vegetable margarine

4 oz plain soy yogurt

1 cup raw sugar

Egg Replacer for 2 eggs

1 teaspoon vanilla

3/4 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

5 tbsp bourbon

1/2 cup cut chocolate bits

1/2 cup white carob chips

4 tbsp melted chocolate

Pie Crust

 

Mix all ingredients but white chocolate chips and chocolate  bits. Drizzle together. Batter will be very stiff. Spread on top of a pie crust — bake at 350 degrees for 30 minutes or until done. Sprinkle with white carob chips and drizzle with the chocolate. Serves 8 +

I’m not vegan, but doesn’t this sound wonderful?! (It looks like there are many scrumptious goodies to try if you pop over to Janet’s photo stream.)

Now—in regard to the bourbon above.

This recipe only calls for 5 tbsps, but if the alcohol bothers you, I’m sure there must be something similar-tasting you could substitute with. (I’m sorry—I just don’t know what. If you do, please leave your suggestion in a comment below.) I have to admit—bourbon’s not something I readily keep on hand at my house and I’ve never tried it. But goodness… all THAT chocolate! Mmmm…

    For those who might be troubled by the alcohol…remember that it does cook out, completely, leaving only the flavor.

    I have a recipe for a gluten-free chocolate pie, and the ingredients, but as this week was dominated by book edits and Major Doggie Dysentery (half the population was affected) I didn’t quite get to it.

    The dogs are mostly better, and I’m exhausted. Had three hours of sleep between Sunday morning and Wednesday night, taking care of the guys.

    The recipe you have up sounds wonderful…I will try it with gluten-free flour, see how it goes.

    Sorry if this is choppy. I’m going into microsleep as I type.
